Roaster Paul Gallegos, who began his professional roasting career at Peet’s Coffee in the late 1980s, runs this roastery, tasting room, and coffee bar just north of Historic Old Town Albuquerque. Proprietary blends and single-origin offerings are taste-tested batch by batch, from specialty-grade coffees sourced worldwide. The shop is named for the cutbow trout in honor of Gallegos’s late father, and a portion of proceeds from every bag sold goes to the Hermit’s Peak Watershed Alliance.
